Awesome Onion Rings

These are low fat and delicious!

3 medium or 2 large yellow or sweet onions

1 cup flour

1 cup non-alcoholic beer (for leavening)

1/4 teaspoon cayenne pepper (optional)

1/2 teaspoon seasoning salt

1/4 teaspoon freshly ground black pepper

2 egg whites beaten to soft peaks

1 bag of herb-seasoned croutons (crushed or processed into 2 cups of fine crumbs)

2 tablespoons canola oil Canola cooking spray

 

Jell-O

As we are in Utah, never forget Green Jell-O with Carrots!!!!!! Jigglers are also fun to make. Follow the recipe on the gelatin box and have the boys take small cookie cutters and cut out their own snacks.

Fried Scones

Another Utah favorite is fried scones. Nearly any bread dough recipe will work, and frozen bread or roll dough makes it especially easy. (Frozen roll dough is already portioned for the boys.) While heating 1 to 1-1/2 inches of vegetable oil in a heavy skillet or dutch oven, have the boys flatten their dough ball (about a 2” ball per boy) on a piece of waxed paper with a little flour on it to prevent sticking. The thinner the dough the better. When a small pinch of dough is dropped into the oil, it should immediately start to bubble and pop to the top. Slide bread dough, one at a time, carefully into the hot oil. When the edges just start to turn golden, flip the scone over using a long-handled fork. When golden all over, remove from hot oil and drain on a paper towel. Top with butter and honey or powdered sugar.

 

 

Heat oven to 450 degrees. Cut the onions into 1/2” thick slices and separate them into rings.

Reserve the smallest inner rings for another recipe.

In a large deep bowl, combine the flour, beer, cayenne pepper, seasoning salt, and black pepper and whisk together. Gently fold in the egg whites; the batter should be light and fluffy. Spread the crouton crumbs in a shallow bowl. Coat 2 baking sheets with 1 tablespoon of canola oil each. Hook an onion ring on your finger and dip it into the batter, shaking off the excess. Then dip it in the crouton crumbs and shake off the excess. Place the ring on one of the prepared sheets. Repeat with the remaining onions and batter, placing smaller rings inside larger ones to make use of every inch of the pan. Spray the tops generously with canola cooking spray. Bake for 18-20 minutes, flipping after 10 minutes until lightly browned. Makes 8 servings.

Strawberry Treasures

Strawberries washed and hulled Cream cheese, softened Chocolate chips Hull the strawberries (if you let the boys do this, let them use serrated plastic knives) and slice length-wise. Spread each half of strawberry with cream cheese, place a chocolate chip in the center and press the two halves together.
