Fortune Cookies

Ingredients:
1/2 cup sugar
2 egg whites
Pinch of salt
1 /4 cup melted margarine
1/4 cup all purpose flour
1/4 teaspoon vanilla extract

Prepare 15 “fortunes” on 2 1/2 x 1/2 inch slips of paper.

Preheat oven to 350 °. Butter a baking sheet.

In a mixing bowl, stir the sugar into the egg whites. Add the salt.
When the sugar is fully dissolved, add the margarine, flour, and
vanilla and beat with a mixer until smooth.

Drop the batter, 1 teaspoon at a time, on the prepared baking
sheet spacing them 2 inches apart. Bake for 5 minutes, or until
the edges are browned.

Transfer the cookies to a cutting board. While still warm put one “fortune” across the center of
each circle and fold each cookie over to form a semicircle. Fold the semicircles over the edge of
a bowl to shape them. Let cool in place.

You will have to work fast because the cookies are flexible only when they are warm. If
necessary return one “un-fortuned” cookie to the oven for a minute to warm up and become
pliable again.

Have the boys come up with the “fortunes” for the cookies.
