I recently stumbled across this recipe while web surfing and I just had to share it. It never occurred to me to make my own powdered cocoa mix and now I can. This would also make a nice holiday gift, placed in a Mason jar and decorated with a nice ribbon and a homemade gift tag.

3/4 C. cocoa
1/2 t salt
1 quart powdered milk
dry sugar substitute equal to 1 1/2 C. sugar
Optional:

Mexican Cocoa: add 2 to 3 Tbsp. ground cinnamon
Mocha Hot Cocoa: add 1/3 C. instant coffee

Mix ingredients well and store in an airtight container and store in a cool, dry place.

To prepare, add to 2T of the mix to 6oz boiling water. For Mexican cocoa, add 2 to 3 t per cup of ground cinnamon to the powdered mix. For Mocha, add 1/3t instant coffee per cup to the powdered mix.

while I love the idea, sadly the last time I priced this out it was much more expensive than any of the mixes at my grocery stores. I did not price it at a wholesale or warehouse store but I suspect the same might be true! There are many other variations too - mint, vanilla, orange, making it mocha for the oldest Scouts. To smooth it out a bit, use some dry non-dairy creamer in place of some of the dry milk.
